THAI CUCUMBER SALAD 1/2 C water 5T sugar 1/4 C white vinegar Fresh chillies Red onion Cucumber sliced Boil water and sugar for a couple of minutes to achieve light syrup consistency. Pour into serving dish and add vinegar, thinly sliced chillies and red onion. This mixture can sit for a while to let the chilli flavour develop.
