Malaysian Pineapple Salad. For 2 people 1/2 pineapple cut into small chunks 1 cucumber deseeded and sliced 1 red onion thinly sliced tblsp peanuts roasted and crushed Dressing Juice of one lime 1 tblsp fish sauce 1 tsp sugar 1 clove garlic chopped and mashed 1 tsp fresh chopped ginger 1 or 2 chopped red chillies or/and chillie flakes. Combine the dressing ingredients in bowl, mix well. Place other ingredients except peanuts in a bowl. Pour over dressing and mix well. Leave for twenty minutes for the flavours to develop. Sprinkle peanuts on top when ready to serve. This is based on a meal we first had in Langkawi. Their version was quite spicey hot which we liked. Works with less chilli if that is what you prefer.
