PUMPKIN PIE 1 Cup cooked pumpkin, Baked, boiled or steamed until it's soft. Mash the cooked pumpkin good and press it through a course Sifter, so that it is very fine . I find that ½ Kilo, when peeled, Cooked and mashed winds up as 1 cup finished product. 3/4 Cup Sugar, you may want to taste 1/2 cup first. The sugar here is very sweet. But taste the mixture after all ingredients have been added. The sugar can be added anytime. 1 Egg, well beaten. 1/4 Cup Sweet milk. I use Carnation non fat powder. Any will do. 1 Tblsp flour. 1 Tblsp Butter. 1/4 Tsp Cinnamon, ¼ Tsp. Nutmeg, ¼ Tsp. Allspice or Cloves. 1/2 Tsp. Salt. 2 Tblsp. Some kind of nuts or Coconut. (Optional) 1 Unbaked Pie Crust. Blend all ingredients well. Bake for about 50 minutes at 350 degrees. PIE CRUST: 1 Cup Flour (sifted) 1/3 Cup Shortening i.e. Crisco 1/2 Tsp. Salt 3 Tblsp water, (this ain't always true, it may take more to make the dough work right) Mix with as little handling as possible.
