CHOCOLATE CARROT CAKE Ingredients: 185g (6oz) butter 3/4 cup sugar 2 eggs 1 T golden syrup 2 T cocoa 2 cups grated carrot 1 1/2 cups self raising flour 3/4 cup milk 1 t bicarb soda Method: Cream butter and sugar until just combined, beat in eggs. Mix in golden syrup and carrot. Combine flour, cocoa and bicarb soda in sifter. Add flour mixture and milk in two batches (ending with flour). Pour into greased and floured cake tin. Bake in moderate oven for 35-45 mins. Icing: 60g (2oz) cream cheese 20g (1/2oz) butter 1 t orange rind 2 cups powdered sugar fresh orange juice Method: Beat together cream cheese and butter.
