PAOLO'S 'LAZY MAN' ITALIAN BREAD 3C warm water 2C plain flour 1T sugar 1 sachet yeast Milk (just a little to help yeast grow) Mix above ingredients with a whisk. Leave in warm place with plastic bag over bowl for 20-30 min (until mixture bubbles). Add: 4C plain flour 2t salt Mix well with wooden spoon (mixture will be sticky). Leave in warm place to rise for 2 hours (cover bowl with plastic bag). Add a little more flour, just enough to handle the dough and remove from the bowl. Place dough on floured baking sheet and sprinkle more flour on top of dough mixture. Leave to rise for only 15-20 min. Bake in hot oven (200-220 C) for 25-40 min. Do not open oven during first 25min. NOTICE THAT KNEADING IS NOT REQUIRED!!! Hints: Mix dough in plastic bowl, not metal.
